Your sweet tooth will love this recipe. It’s one of those desserts that anyone will love; whether you usually just stick to chocolate or custard, this crunchy carrot cake will make your mouth melt! A crunchy and soft bite with a sweet creamy frosting makes a good blend for your tastebuds - they will thank you!

And of course, if you don’t like the crunch, you can totally avoid adding the nuts and raisins - they’re optional! And the cake will still be delicious!

Most delicious crunchy carrot cake 



List of ingredients:

For the cake

Makes about 15 servings
Bake for 60-70 minutes at 350°F (180°C)
  • 3 eggs
  • 1/2 cup vegetable oil
  • 2 cups brown sugar
  • 2 cups flour
  • 1 cup of milk
  • 2 cups grated carrots
  • 1 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup of chopped walnuts (optional)
  • 1/2 cup raisins (optional)



For the frosting


  • 8 oz package of cream cheese
  • 2/3 cup powdered sugar
  • 2 tsp vanilla flavor
  • 3 tbsp water


Step-by-step guide:




Start by beating the eggs, one at a time





Add the oil





Blend it together and set aside





Flour time!





In another bowl, prepare the dry ingredients







Add the brown sugar






Add the baking powder





Add the cinnamon powder





A nice mixture of dry ingredients





Mix together carefully... or else you'll get a messy table.







Dry and wet ingredients are ready to be one





In with the dry





Blend the dry and the wet to one mixture





Now we are almost ready with the batter!





A much special guest appearance... making sure the cake gets extra delicious!





Milk time





Add the milk






Blend together. This might take a while but just be patient and work with it until you get a smooth batter.








The core ingredient





Chop the carrots so they fit inside the food processor





Ready to roll





Grated carrots within a few seconds





You can also buy ready made grated carrots from the store, but I just like to bake from scratch

Not only does the taste blend so well, but so does the colors!





Add the raisins (of course optional if you don't prefer the crunchy part)

Blend walnuts, raisins and carrots into the batter





The final result of the batter








Grease the baking pan





Pour the batter into the baking pan, and let it bake for 60-70 minutes at 350°F (180°C)




It's time to make the frosting while the cake is baking!





Start with the cream cheese





Add the powdered sugar





It gets even sweeter...





Add the vanilla flavor





This is my to go vanilla flavor. Vanilla extracts are usually stronger in flavor due to the alcohol content. I love this as a substitute since I prefer alcohol free products. You can buy this at Trader Joe's.





Cream cheese, powdered sugar and vanilla flavor ready to blend!





Mix it carefully; or else the powdered sugar will snow everywhere!





A nice frosting





Add a little water to smooth out the thickness





There you go, much creamier.





Cake is baked





When the cake has gotten colder, then you can smear the frosting on it





Silicone spatula works fine with smearing the frosting on the cake





There you have it.








Just... wow.
