Your sweet tooth will love this recipe. It’s one of those desserts that anyone will love; whether you usually just stick to chocolate or custard, this crunchy carrot cake will make your mouth melt! A crunchy and soft bite with a sweet creamy frosting makes a good blend for your tastebuds - they will thank you!
And of course, if you don’t like the crunch, you can totally avoid adding the nuts and raisins - they’re optional! And the cake will still be delicious!

- 3 eggs
- 1/2 cup vegetable oil
- 2 cups brown sugar
- 2 cups flour
- 1 cup of milk
- 2 cups grated carrots
- 1 1/2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp salt
- 1 cup of chopped walnuts (optional)
- 1/2 cup raisins (optional)
For the frosting
- 8 oz package of cream cheese
- 2/3 cup powdered sugar
- 2 tsp vanilla flavor
- 3 tbsp water
Step-by-step guide:
Start by beating the eggs, one at a time |
Add the oil |
Blend it together and set aside |
Flour time! |
In another bowl, prepare the dry ingredients |
Add the brown sugar |
Add the baking powder |
Add the cinnamon powder |
A nice mixture of dry ingredients |
Mix together carefully... or else you'll get a messy table. |
Dry and wet ingredients are ready to be one |
In with the dry |
Blend the dry and the wet to one mixture |
Now we are almost ready with the batter! |

Add the milk |
Blend together. This might take a while but just be patient and work with it until you get a smooth batter. |

You can also buy ready made grated carrots from the store, but I just like to bake from scratch |

Pour the batter into the baking pan, and let it bake for 60-70 minutes at 350°F (180°C) |
