A crunchy and soft bite with a sweet creamy frosting makes a good blend for your tastebuds - they will thank you!
And of course, if you don’t like the crunch, you can totally avoid adding the nuts and raisins - they’re optional! And the cake will still be delicious!

- 2 cups brown sugar
- 2 cups flour
- 1 cup of milk
- 2 cups grated carrots
- 1 1/2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp salt
- 1 cup of chopped walnuts (optional)
- 1/2 cup raisins (optional)
For the frosting
- 8 oz package of cream cheese
- 2/3 cup powdered sugar
- 2 tsp vanilla flavor
- 3 tbsp water
